Reheating Ribs

Put a grid in the bottom of a 6" pan

Pour water into the pan until the water reaches the top of the grid

Put the ribs in the pan vertically so the rib bones of each rack of ribs is on the grid

Cover the pan with a lid or foil

Cook the ribs at 325F for 45 minutes

Remove from oven and keep covered.


When the ribs are moved from the backup warmer to the hold smoker

Put the ribs on a grill to get char marks

Sauce the ribs and put in warming cabinet
